Recipe for the Week: Lemon Yum Yum Pie
Ingredients: 1 ½ sticks oleo, 2 cups plain flour, ½ cup chopped pecans
Directions: Melt oleo and mix in nuts and flour thoroughly. Spread in a 13x9- inch pan and bake at 350 degrees about 25 minutes or until light brown. I large carton cool whip, 1 8ox. Cream cheese, 1 cup powdered sugar, ½ cup coconut, 2 regular boxes instant lemon pudding, 3 cups sweet milk, ½ cup chopped pecans. Mix ½ box cool whip with softened cream cheese and add 1 cup powdered sugar and mix well. Spread on crust and then sprinkle on this ¼ cup pecans and ¼ cup coconut. Mix instant pudding mix with milk and spread on above. Spread remainder of cool whip on top. Top with pecans and coconut. Refrigerate for 4 hours or longer. Cut in squares.
